Chicken Liver Parfait

So I’ve passed this to a few family members and they all approve! It is unreal. The Parfait is completely free, the jam does have syns but minimal.

What you will need for the Parfait

400g Chicken Liver (Mccarthys Gurranabraher stocks this if you ask for it)

2 Shallots Finely Diced

50ml Chicken Stock

Frozen Garlic or 2 Cloves Garlic

2 Eggs

200g Quark

Chilli Jam

2 Red Onions Finely Diced

100mls Balsamic Vinegar

Chilki Flakes

1/2 Tbsp Sweetener

45g Reduced Fat Strawberry Jam

To make:

Preheat Oven to 160°c

Place a large pyrex dish into the oven filled half ways with water

Wash your Chicken Liver Trim any excess fat (not the most appealing if Im honest)

Fry on a pan until sealed, brown on the outside but pink inside.

Place to the side to cool

Then in a small pot place 50mls Chicken Stock, Shallots, Garlic & Thyme. Cook on a high heat until it becomes like a syrup then lower the heat and simmer away removing from the heat

In a Blender place your Liver, 2 Eggs, 200g Quark and the sauce you have just made.

Blitz Blitz Blitz

Once your Smooth Mixture is ready place in 3 of the dishes shown above.

Cover in foil Place in the pyrex dish and cook for 30 mins.

Remove from Oven Allow to cool completely before popping them into the fridge overnight to chill.

For the Jam

In your frying pan sprayed in Butter Fry Light – add your diced red onion, Balsamic Vinegar, Chillie Flakes to taste and allow simmer for the 30 mins on a low to medium heat. Then add in your reduced fat Jam.

For my Bread

I used 60g of Wholemeal bread as my Hexb toasted and cut into Soldiers.

All of the Parfait is completely Free

The Jam is 1.5 syns as you will get 3 portions

Ye will thank me. It does take time but soooooo worth it.
